Gujarat: fafda-jalebi on Dussehra morning

After nine nights of Garba, Dussehra morning in Gujarat is famous for fafda-jalebi. Farsan shops are busy from early morning, and many families also make it at home. Origin stories vary: the common explanations are that it marks the festive end of the Navratri fasts, or that it recalls a sweet Lord Rama is said to have enjoyed. These are popular explanations, not scripture.

In short: fafda is a soft besan dough with ajwain and a pinch of papad khar, stretched by hand into long strips and fried crisp; jalebi is a lightly fermented flour batter piped into spirals, fried and dipped in saffron-cardamom syrup. They are served with raw papaya sambharo, fried green chillies and a thin kadhi chutney.

West Bengal: Bijoya Dashami sweets and greetings

In Bengal, Dashami is the farewell of Durga Puja. After the final puja, Sindoor Khela and the immersion, families greet one another with 'Shubho Bijoya': younger people touch the feet of elders and receive blessings, friends embrace, and every visitor is offered something sweet. Bijoya visits to relatives and neighbours carry on for days or weeks, which is why kitchens make sweets and snacks that keep well.

In short: narkel naru are small balls of fresh coconut slow-cooked with jaggery or sugar; nimki are flaky, nigella-studded diamonds of flour and ghee, fried slowly; ghugni is a warm, spiced yellow-pea curry topped with roasted cumin-chilli powder. Shop-bought rosogolla and sandesh are commonly exchanged alongside.

Tamil Nadu, Kerala and Karnataka: sundal and payasam

In Tamil homes that keep a Golu, a lamp is lit every evening of Navaratri and a sundal is offered and handed to visitors with kumkum and a small gift. Many families make a different sundal each day, though the order varies. Similar legume dishes are made across the South: commonly called usli in Karnataka and guggillu in many Telugu homes, and Kerala homes also prepare them for Navaratri. On Saraswati Puja and Ayudha Puja, which fall on Monday 19 October in 2026, books, instruments and tools are worshipped and a fuller naivedyam is commonly offered, often with payasam or sweet pongal alongside sundal, puffed rice and fruit.

In short: soak and cook a legume (white or black chana, green gram, chana dal, peanuts, black-eyed peas or sweet corn) until tender but whole, then toss with a tempering of mustard, urad dal, red chilli, curry leaves and hing and finish with fresh coconut. Payasam is usually rice or vermicelli simmered in milk with sugar or jaggery, cardamom and ghee-fried nuts.

Telangana: saddulu for Saddula Bathukamma

Bathukamma, Telangana's flower festival, ends with Saddula Bathukamma, named after the saddulu, the several kinds of flavoured rice offered to Gauramma and shared after the immersion. In 2026 the Telangana government schedule places Saddula Bathukamma on Sunday 18 October. Malida, a sweet crumble of wheat rotis, jaggery and ghee, is also made by many families during the festival.

In short: cook plain rice and cool it, then make lemon rice, tamarind rice, coconut rice, curd rice and sesame rice, all built on a shared tempering of peanuts, chana dal, urad dal, mustard, red chillies and curry leaves.

North India: halwa-puri-chana for Kanya Pujan

On Durga Ashtami or Maha Navami, many families in North India honour young girls as forms of the Goddess in Kanya Pujan, also called Kanjak. Their feet are washed, a tilak and a red thread are offered, and they are served the classic prasad of sooji halwa, puri and dry black chana, followed by a small gift. In 2026 Ashtami and Navami both fall on Monday 19 October in India; families abroad should check their local date.

In short: sooji halwa is semolina roasted in ghee until golden and cooked with sugar syrup or water and sugar, flavoured with cardamom; puris are small wheat-flour breads deep-fried until puffed; the chana is soaked black chickpeas cooked dry with cumin, ginger and spices, typically without onion and garlic.
